Simplicity is a rare thing in our exponentially more occupied lives. Or at least it seems that way. Every new smart phone I get confuses me with flashy new features and it reminds me that I am getting old. I wouldn’t have the damn thing except out for my necessity to drunk dial old girlfriends and update my Facebook. I feel bombarded from all sides by the world of computer screens and “fake news”. What is real? Where am I? The chaos that modern life brings is exactly what Seedstock Brewery hopes to alleviate with their traditionally crafted German and Czech brews.
I am a mess sometimes and complicated at others, but deep down I am just looking for simple pleasures like good beer and weirdos to watch while I drink the beer. The eclectic life that explores Colfax is undeniable and it’s damn fun to try and figure out what they are doing. Ronny understands this need that people have. That’s why they chose West Colfax for a taproom. Or at least that is what I came to believe after spending some time talking with him on the patio of Seedstock Brewery. He emphasized that his brewery is about getting back to the basics, embracing the good stuff – simple, clean, and sexy lagers, pilsners, and Dunkels.
Seedstock Brewery’s craft brews are the kind of beer that allows you to pull Grandpa into your world of high-quality beer and out of the Bud Light he insists on drinking. It isn’t nice to trick old people into things but here is the opportunity to find common ground with folks that only drink mainstream “Light Beer”. So, really, you are doing them a favor. Change is good, Grandpa. And a solid place to start is with the light and refreshing Kolsch at Seedstock. He will enjoy it, I promise. And it is made with hard work and passion. Old people love hard work. But Seedstock also brings complexity to their beers, and consequently, to your pallet.
I should emphasize that when I say simple, I don’t mean bland or boring – their beers are layered with flavors and nuance – but you don’t need a tutorial on how to drink the beer after you order like so many other places. There is no need to make drinking difficult. They also brew a stellar IPA and delicious Vanilla Espresso Stout at the moment for variety.
Seedstock Brewery is designed to represent a new West Colfax way of life. It is juxtaposed against the hustle and bustle of Denver’s most notorious street. Comfort amid chaos. West Colfax is a growing and rapidly changing neighborhood with families and young people moving in at an alarming rate. Folks are going to need a place to unravel after a long day. Ron and his business partners want to be at the center of it all through their various charity events and their participation in the West Colfax Association of Neighbors.
